« Rare Dry-Aged Jersey Steer at The Lantern »
The Lantern, Andrea Reusing's establishment known for Asian food cooked with local ingredients, has some rare treats on its menu this week.
According to the West Franklin Street restaurant's newsletter, it just acquired a dry-aged Jersey steer, which is considered exceptionally flavorful and tender. This kind of steer is also rarely seen on menus, because it is small, slow-growing, and expensive to raise. The steer was born a few miles away from the restaurant at the Chapel Hill Creamery and raised there on the pasture for two years.
One more treat to keep a look out for: Chefs just received a big box of foraged chicken-of-the-woods mushrooms in the mail from Asheville, which they will pair with braised short ribs and shanks in a rich broth.
